Tinned Seafood Pantry Essentials

  • Finishing Salt
  • Cracked Pepper – we use Aleppo at JarrBar but feel free to experiment with any peppers you like
  • Excellent olive oils - There's a wide variety of them available today. Interestingly, it has also attracted the attention of organized crime. Stay tuned for more updates on this topic.
  • Crackers – Ritz, Triscuits or something more fancy. Keep it basic. There is no better vehicle for tinned fish than crackers (yes even better than bread)
  • Good Bread – bread to soak up oil. Pick what does that best.
  • Fresh lemon—you know what a lemon looks like. Fresh lemon! No other citrus. A real chef taught me that, and it holds true.
  • Sauces – Literally try any tinned fish with your favorite sauces or dressings. If you need recommendations then visit us…..

Featured Recipe - Elevated Tinned Tuna Appetizer

This recipe showcases the versatility of quality tinned tuna, particularly with Don Bocarte Tuna in olive oil. The dish combines simple ingredients to create an elegant appetizer that lets the tuna's quality shine through.

Ingredients:

  • 1 tin tuna in olive oil, drained
  • 1 teaspoon lemon zest
  • ⅛ teaspoon juiced lemon
  • 1 teaspoon shallots, finely diced
  • 1 tablespoon capers, chopped
  • 1 tablespoon premium dill pickle, chopped
  • Dash of celery salt
  • Dash of Aleppo pepper (or other mild chili pepper)
  • 1Tbsp Mayo / Aoili (optional)

Instructions:

  1. In a mixing bowl, combine all ingredients except the chili pepper
  2. Mix gently to maintain the tuna's texture - avoid overmixing
  3. Serve on crackers and finish with a light sprinkle of chili pepper

Variation with Tuna Belly:

  1. Warm thin slices of baguette
  2. Place drained tuna belly portions on the warm baguette
  3. Drizzle with the prepared sauce mixture
  4. Serve immediately

Chef's Note: The key to this recipe is using high-quality tinned tuna and maintaining a light touch when mixing to preserve the delicate texture of the fish.

JarrBar Old Fashioned

  • 2 oz bourbon, rye or dark rum - rum is Bryan Jarr's favorite
  • 1/4 oz of simple syrup
  • dash of sherry - PX, Amontillado or Olorosso
  • 3 dashes bitters - we like orange or black walnut but have fun experiments
  • Orange and Brandied Cherry for garnish

In your cocktail glass add sherry and lightly twirl the glass to coat it with the sherry,

In a mixing glass add bitters, simple syrup and desired spirit. Add ice. Stir a fair amount. Strain into your sherry washed cocktail glass with ice. Garnish with brandied cherry and a slice of orange. Enjoy!
